Vegan Mint Green Tea Cupcakes- Happy Birthday Hope!



It's Hope's Birthday and I've whipped a batch of Peppermint Green Tea Cupcake.  This was actually the second attempt, the first attemp turned out lovely, however the actual cake was dark black.  It wasn't burnt, but it did looked like chcoolate cake.  I think it had to do with the green tea matcha that turned the cake was completely black if baked too long.  This time around, I closely monitored the cupcakes, I noticed it turning brown even though it wasn't completely cooked but turned out a dark swamp green... oh well, it may not have a grass green colour, but its all natural without food colouring!


Yield: 
12 Cupcakes
Equipment:
Muffin Pan
Muffin Liners (12)

Ingredients:
  • 1 cup soy milk
  • 1 teaspoon apple cider vinegar
  • 3/4 cup organic sugar
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pepper mint extract
  • 1and 1/3cup all-purpose flour
  • 3 tbsp green tea matcha powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Directions:

1. 
In a bowl, combine soy milk and apple cider vinegar together, the soya will thicken.
2.
In a separate bowl, sift together the all purpose flour, baking soda, baking powder, salt, and  matcha powder.
3.
In the soy milk and vinegar mixture, combine the sugar, vanilla extract, peppermint extract, vegetable oil and whisk until frothy. 
4.
Combine the sifted dry ingredients with the wet.  Don't over mix, just until the lumps are gone and that the dry ingredients are incorporated.
5. 
Bake for 15-20 minutes in a preheated 350 degrees oven.





GREEN TEA ICING
Equipment:
Electric Mixer or Stand Mixer
Ingredients:
  • 1 cup Earth Balance
  • 3 tbsp matcha green tea powder. 
  • 3 cup vegan powdered sugar
  • 1-2 tbsp of soya milk

Directions:

1. 
Whisk together the Earth Balance butter. Add powdered sugar and whip until light and fluffy! (5-10 mins)
2.
Dissolve the matcha powder in the soya milk and whip with the icing until combined.
3.
Decorate your cupcake!

My Procrastination Syndrome...Themed Cake: Angry Bird

Shame on me.... what's my excuse this time.... Diablo 3!!  I've been playing this game for the past 3 months now... enough excuses...  I should make it my goal to post at least 1 entry every month!

My co-worker's daughter's birthday was on June 10th.  Two week prior I overheard her in the next office talking about how she wanted to buy a themed cake for her daughter's 8th birthday and was waiting on pricing confirmations from bakers.  As soon as she passed my office door, I waved her inside and asked her about the cake she was going to get her daughter.  She showed me some Angry Bird Cakes.  I ashed her which cake had she planed on getting her daughter from the pictures she showed me and it was a 2 layer cake, being a rectangle base, and a circle second layer.  I then asked her how much she would be charged for such beautiful cakes and I was astonished to hear that it would be approximately $400.  I looked at it and said that I could replicate that cake and charge only half the price.  She was a bit skeptical, but I quickly whipped out my iPhone and showed her my past wedding cakes and she was convinced.  For the next half hour we planned out the detail of the cake.  It took me a whole week to plan out her cake and prepare the marshmallow fondant ready a few days before.    I took the Friday off to baked the cake in the morning and masked it in the evening. 

 On the day of her daughter's birthday, I delivered the cake with my car's AC BLASTING because it was incredibly hot!.  I was soooooooo afraid the cake was going to melt.

Everything turned out well.  I assembled the cake at her house and all the kids were excited.  It made me really happy **blush**

It was very tiring and labour intensive.  All-in-all I was very pleased with the results! It's a matter of time before I do another cake!

Attempt: Wedding Cake?!?!

It's been a while since I posted something but I’ve been incredibly busy with my condo...I moved out.  Throughout the week I have been packing, mini moves and looking for boxes.  It makes me sad to know these two cake were the last things I baked this place.  I moved on Saturday.  It won’t be the same cooking and baking in another other house. 
Aside from my personal life, this year is the year of weddings for me.  Four good friends are getting marry and the closest wedding will actually be in March!  They only announced their engagement last month!  This will certainly be interesting and fun, I haven’t attended a wedding in years, not to mention that I will be a bridesmaid.  I wonder what’s that like.....never been before..
Now here’s the crazy part, I even offered to make their wedding cake!! I have never made a wedding cake, nor have I ever learn how to make and decorate a wedding cake in my baking class.  by the way, it was over four years ago when I last took a baking class.  I have confident in myself, and I love a good baking challenge.  I went to the store and found all the supplies I think I needed which are, a Fondant Roller, Fondant smoother, already-made fondant, and gel food colouring.  I already have piping tips and piping bags at home so I thought I was SET!

The internet is such a powerful and helpful tool.  I researched and studied with the help of youtube and blog sites on how to build and decorate a fondant wedding cake.  After buying already-made fondant, I realized that marshmallow fondant its actually very easy to make, plus those who made it say its tastier too.  I was convinced, plus it cheaper too!  I didn’t return the fondant I bought cause I wanted to compare it with the marshmallow fondant.  My verdict is that the marshmallow fondant IS easier to make as well as being yummier.  The major difference between the two is:

Smells like sugar up close
Very firm and needed to microwave to soften
Soft, like new Playdough
Due to the firmness, difficult to roll thin
Easy to roll
Just taste sweet but slightly doughy

I made a simple chocolate cake recipe and after that, I crumb coated  the cake with a simple vanilla butter cream and placed it in the fridge for about four hours for the coat to harden.  What is Crumb coating? I now know that it is important to crumb coat when fondanting a cake.  Basically it is covering the entire cake with a very thin layer of icing to seal in the moister and FRESHNESS.  It also keeps the cake from (excuse my home-make term) "crumbing" and falling apart when you apply the fondant over your cake.

This was the result of my first attempt.  I honestly did not know how I should design the cake.  The bride gave me complete design control.  I was glad to have full control, but at the same time I was overwhelm with all the beautiful designs I saw on the internet which made it difficult to decided.  I wanted to gather ideas and did not want to copy someone else's design idea.   Eventually I realized that simplicity is the best.  I would incorporate her wedding theme colour, and flowers into the cake.  


I got alittle creative and decided to add a black ribbon.  Great colour contrast but I debating weather or not I want to add anything non-edible to a cake....
Although this cake has blue roses, I am wishing she won’t have blue roses in her wedding (I over heard her saying she will be holding a bouquet of blue roses, her favourite)  they were extremely time consuming and difficult to make.  And if a professional were to judge these roses, they would definitely criticize their shapes.  They don’t look like true roses.  Oh well I need more practices and I WILL definitely do it the bride wishes.  The second cake I made were decorated with calla lilies.  Much easier to make. 

Second Attempt, with home-made marshmallow Fondant.
 The second cake is a vanilla cake filled with mango buttercream.  It was FANTASTIC.  I had 2 slices of cake that night.  It was soooo tasty, I was surprised.  I just followed a basic buttercream recipe, but incorporated Mango Puree.  Excellent result and it was a hit. 
What I learned was that you can't make flowers with marshmallow fondant.  It will not hold it's shape.  I made one and waited 3 hours for it to harden.  never hardened.  I then did a bit of research and found out that I should be using gum paste, a.k.a sugar paste, a.k.a pastillage.  Apparently its easy to shape and it dries quite quick, which also means that you have to work fast!.  I haven't looked for gum paste recipes yet but I have seen it for sale at Bulk Barn.  I'll probably buy it if it cost less.

Individual Chocolate Cake

Doesn’t this look nice, and doesn't it look like i spent alot lot of time in the kitchen? I didn’t, just a simple chocolate cake mix, and the help of a mini bundt pan was basically all I used.  What I have here is chocolate cake, drizzled with melted chocolate icing (Betty Crocker) and topped with a scoop of Cookie and Creams ice cream. 

I actually bought this mini bundt pan 2 years ago and this pan had been on my baking shelf staring me in the face for a while.  I always wanted to use it, but for some reason, I just never did.  I’m actually moving soon, so when saw this pan in the cabinet, I told myself that I need to use this mini bundt pan before i move out of my house.  Yes, cake mix, I usually have one of these stored at home, just in case I crave for chocolate cake, this way is fast and easy.  


Yield 12 
Equipments:
Mini bundt pan

Ingredients:
Cake mix of your choice
Ice Cream of your choice
Icing of your choice
That's it!

Directions:
1.       Follow instruction of cake mix on the back of the box
2.       Grease the pan with butter.  This lets the cakes slide out easily when cooked
3.       Put icing in microwave and melt icing
4.       Assemble by drizzling melted icing and toping with ice cream

Looks good and taste awesome!
You don't have to spend a lot of time in the kitchen to create such amazing results.  Don't be afraid of cooking, all you need to do is be creative and you will surely impress your friends and family.
